TAPIOCA PEARL DISHES | SABUDANA KHICHDI & KHEER | ಸಬ್ಬಕ್ಕಿ ಖಿಚಡಿ ಹಾಗೂ ಪಾಯಸ

 SABUDANA KHICHDI 


An Indian dish prepared from soaked tapioca pearls ( Sabbakki | ಸಬ್ಬಕ್ಕಿ| Sabudana | Sago Pearls) 

in the States of Karnataka, Maharashtra, Gujarat, Rajasthan, Uttar Pradesh & Madhya Pradesh.


1.5 CUPS SABUDANA

WASHED & DRAINED

SOAKED FOR 4  HOURS


  Sabudana rice served 
 with Spinach Sambar

Sabudana dishes are most popular & choice of food when people observe 'fasting' during Ekadashi, Shivaratri, Navaratri or any other Hindu religious occasion.



This dish is prepared using roasted peanuts, sauteed with potatoes using spices, coconut and generous squeeze of lemon.

2 table spoon peanuts, 1 potato, 1/3 cup coconut


cut potato into bite size pieces

4 green chillies, few curry leaves

chopped into small pieces

1.5 tsp. cumin seeds


Pre-heat a pan,  toast peanuts


boil potatoes


toast peanuts until golden brown


4 table spoon ghee


Heat ghee,  fry cumin seeds


cumin seeds fried until golden brown



Add 1/2 tsp. hing powder (optional)


Add toasted peanuts,  
curry leaves, green chillies

fry for a minute or two

Add 1/2 tsp. turmeric powder (optional)
I like it in my everyday cooking

Add 1/3 cup coconut (fresh or desiccated)


Add soaked & drained Sago pearls

Add salt to taste

Add boiled potatoes

Add 2 table spoon lemon juice

Mix well to combine

Add finely chopped coriander leaves

Serve Hot


Sabbakki Payasa | Sabudana Kheer 







INGREDIENTS & METHOD

1 cup Sabudana, 1 cup sugar or jaggary powder, 2 tsp. powdered cardamoms, 1 cup coconut milk, 2 cup full cream milk, 1-2 tsps. cashews & raisins toasted in 2 tsp. ghee.

Wash & soak sabudana for 2 hours.  Drain water and keep it aside.  In a pre-heated pan, add tapioca pearls and fry for 10 mins on a medium heat.

Heat a heavy bottom pan, add 2 tsp. ghee and fry cashews & raisins on medium heat.
  
Add coconut milk, full cream milk, powdered cardamoms, saffron - bring it to boil.

Add sugar or jaggary & fried tapioca pearls, mix well to combine.  Simmer Kheer on low heat & cook until sabudana is cooked through.

Remove from heat and serve hot or chilled.
