FRIED RICE | INDO-CHINESE CUISINE


FRIED RICE




Delicious and easy to prepare dish, goes well with sliced onions & cucumbers,
An Indo-Chinese Vegetarian delicacy prepared back home in India at Restaurants.



INGREDIENTS & METHOD


  • 2 cup Basmati Rice
  • 3-4 tbsp. Oil
  • 1-2 cups - vegetable of your choice
  • Green chilli to taste
  • 1 tbsp. Ginger & garlic, red chilli paste 
  • 2 tbsp. soy sauce & green chilli paste
  • 1 tbsp. Ajinomoto
  • Salt & pepper to taste



Wash and soak rice in enough water for 10-15 minutes and drain.    
In a large vessel, boil water, add rice and little salt and cook uncovered on low heat till rice is tender.
Take care not to overcook rice. Each grain of rice should be separate. 





Heat oil in a pan and stir fry onions &  vegetables.  Take care that vegetables are not overdone, they should be crisp. 










 
Add other ingredients - salt, pepper, green chilli sauce, soy sauce, ginger & garlic paste




              Add rice, mix well to combine



Serve hot with salad
