KERALA - Kuthappam
Ingredients - All-purpose flour-1 cup, rice flour-1 cup, coconut milk-1cup, pinch of baking powder or baking soda, Salt to taste.
Method – Add all ingredients together; batter consistency should be not too loose or too thick. Let it rest for one hour. Heat a non-stick pan, grease with little oil, pour one ladle full of batter, don’t stir the batter/pan, close with a tight lid and cook on low flame. Appam will start forming holes on the top surface and get cooked in the steam. Once the Appam is fully cooked, flip over, drizzle a little oil, cook for a minute. Fold in half and then quarter like a kerchief. Serve hot with your favourite chutney or curry.
