Noodles Soup
INGREDIENTS & METHOD
- 1 cup Vegetable stock (water, salt, carrot, celery, onion - blended together)
- 1/4 cup each - borlotti beans, brown lentils (cooked until tender)
- 1/4 cup mixed vegetables - sweet corn, kale, quinoa, potato, cabbage, carrot, zucchini, spinach, green beans, 2 bay leaves (lightly salted and cooked until tender)
- 1/2 cup thin noodles (cooked until tender)
- 1/4 cup cream of mushroom (mushrooms, cream, butter blended into coarse texture)
- SEASONING - organic spice mix, chilli powder, salt, black pepper powder, soy sauce, balsamic vinegar - mixed in olive oil and added to soup while boiling
Heat a large pan (on medium heat), add vegetable stock & bring to boil. Slowly add other ingredients, toss to combine and simmer for 5-10 mins. Serve hot.
