Spinach & Mozzarella Cheese Stuffed ROTI



Roti (also known as Chapati) is a flat bread originating from the Indian Subcontinent, made from stone-ground wholemeal flour, traditionally known as "atta".    There are many variations of flat breads found in many cultures across the globe & the traditional flat bread originating from South Asia is known as roti, pronounced "RHO-tee". It is normally eaten with cooked vegetables and curries; and is made from 100% wheat flour, cooked on a flat or slightly concave iron griddle called a "tawa". Like breads around the world, for Indians roti is a staple accompaniment to other foods. 

Sharing here my version of making stuffed roti which can be served with any Indian curries, yogurt and lemon wedges.

Prep & Cook time : 30 minutes 



FOR DOUGH - 1.5 cup Whole Wheat atta (flour), salt to taste, 2 tsp. oil, water as needed to make soft dough.

FOR STUFFING - 2 cup spinach leaves (2 tablespoon for each roti), salt & pepper to taste, 1 tablespoon Mozzarella cheese for each roti (1 cup approximately)

FOR SERVING -  lemon wedges, yogurt, any Indian curry








In a large bowl, combine dough ingredients and make a soft dough.  Divide dough into equal portions and roll into circles.  Place a spoonful of stuffing, sprinkle with salt & pepper, close and roll again (as pictured above) 

 

Cook on a hot tawa (on medium heat) by applying little oil or ghee (optional).  Cook both sides, remove from heat, slice into pieces and serve hot or warm
