TURKISH Pilaf
Turkish Pilaf with Toor Dal Fry |
Ingredients & Method
- 2 cups basmati rice, washed & cooked
- 50gms ghee (clarified butter)
- 1 red onion, diced
- 1 tomato, diced (optional)
- 1 clove garlic, minced
- 1.5 tsps cumin seeds
- 1 tsp. cardamom ground (4-6 cardamom pods)
- pinch of turmeric powder
- salt to taste
- 2 cup vegetable stock
- freshly chopped coriander
- In a pan, place ghee, onion, garlic and all spices and fry for few minutes
- Cook rice until tender, remove from heat, allow it to cool
- Mix the fried ingredients with rice by adding salt to taste
- Garnish with chopped coriander leaves
- Serve hot with Toor Dal Fry
Toor Dal Fry
Ingredients
- 1 cup toor dal
- 2 tbsp. Ghee Or Oil
- ½ spoon freshly grated ginger
- 1 onion chopped
- 1 tomato chopped
- 1 tbsp. Cumin seeds
- Hing to taste
- ½ spoon of Turmeric powder
- Few Curry Leaves
- 1/2 cup milk
- pinch of Garam Masala powder
- 1 tsp. lemon juice
- Salt to taste
Method
- Pressures cook toor dal until tender.
- In a pre-heated pan, sauté cumin seeds for few minutes and then add onions and fry till golden brown. To this add tomatoes, grated ginger, hing, curry leaves and turmeric and keep on frying for few minutes.
- Then add cooked toor dal and mix well with salt, lemon juice & garam masala powder. Simmer for few minutes and garnish with coriander leaves.
- Serve hot with Turkish Pilaf
