Carrot Halwa
Indian Sweets/Desserts are mouth watering and very tempting for any food lover and they are always too difficult to resist. A sumptuous meal is definitely incomplete without any sweet dish. I am proud to mention that my mother is a great cook and my teacher and I have learnt from her to make a number of delicious sweets & savoury dishes. Thank you amma!!
- 1 kg Carrots – washed & grated
- 1 litre full cream milk
- 1 teaspoon Cardamom seeds or powder
- 3/4 cup Water
- 3-4 tablespoons Ghee
- 2 tablespoons each of Raisins, Almonds, Cashews & Pistachios
- 450 grams Sugar – my measurement is 1 ½ cup sugar which is just right taste and not too sweet or less sweet (approximate cooking time when I made this was 3 hours)
Method
- Wash and grate the carrots. Soak the raisins in water for 30 minutes. Blanch and shred the nuts.
- Put the water to boil, when it starts boiling add the grated carrots. Cook for 5-7 minutes.
- Add the milk and cook on a low flame for 1 to 1.5 hours stirring occasionally.
- Add sugar, mix well and cook till the sugar has dissolved and all the milk has been absorbed. (here you can also add bit of badam powder for better taste)
- Add ghee and simmer for 2-3 minutes. Add the slightly crushed cardamoms and the raisins.
- Mix well. Remove from heat and arrange in a serving dish. Garnish with almonds and pistachios. Serve cold, hot or at room temperature.
