Vegan Fried Rice with Marinated Tofu

Scrumptious Vegan Fried Rice with marinated Tofu

INGREDIENTS & METHOD
  • 2 cup vegetables - peas, carrot, corn, green onion, green beans
  • 1.5 cup cooked jasmine rice
  • 1 tsp. each - soy sauce, green chilli sauce, maple syrup, garlic & ginger, apple cider vinegar
  • 500 gms Tofu marinated in - soy sauce, oil, ginger powder, garlic paste, rice vinegar, chilli paste (fried or grilled @ 250 deg.c for 30 minutes / until golden brown)

  • Cut tofu, marinate with marinate ingredients.  Fry or grill.  
  • Heat oil in a pan, fry ginger, garlic, green onion for few minutes.  Add other vegetables and fry until tender.  
  • Add sauces, fry for few seconds.  Add cooking rice, salt to taste.  
  • Mix well to combine, garnish with marinated tofu and serve.
