ITALIAN - Vegetable BAKE







INGREDIENTS
METHOD

Mixed vegetables of your choice, ¼ cup olive oil, salt & pepper to taste, Balsamic Vinegar to taste, 190 gms tomato pesto sauce, 4 tbs. dry Italian herbs, 4 tbs. ricotta cheese



Prep: 10 mins 
Marinade: 15 mins  
Cook: 45 mins 
Serves: 6

In a baking dish, add ingredients, toss well to combine.  Marinade for 15 mins.  Bake in a pre-heated oven @ 180 deg. C for 45 mins (until vegetables cooked, cheese melted, golden brown on top)

Serve as a side dish with any pasta varieties
