Vegetable KOFTA



KOFTA - balls of minced vegetables (or meat for non-vegetarian version) mixed with herbs & spices; usually served cooked in a spicy gravy - consumed with a variety of Indian breads and boiled rice.

Here is my VEGETARIAN version using a variety of mixed vegetables,  cooked in a creamy puree made of almonds, hazelnuts, tomato, carrot & pumpkin.










FOR KOFTA you need - cooked & mashed mixed vegetables, bread crumbs, 1-2 tsps. ginger & red chilli powder, salt to taste.

Above ingredients mixed well to combine, prepared small balls, shallow fried until golden brown. 


FOR GRAVY you need - 1/4 cup together - almond & hazelnut powder, cooked & mashed tomato, carrot & pumpkin, 1-2 tsps. each - cumin, cinnamon, cardamom, pepper, coriander, turmeric, red chilli, garam masala powders, 1/2 cup fresh cream, 1 tablespoon ghee.

Blend - cooked tomato, carrot & pumpkin to puree texture.  Heat ghee, add blended puree, cream, salt - mix well to combine and simmer for few minutes.

Transfer Kofta to a serving dish, pour gravy on top and serve hot with rice or bread.
