Assorted SALADS






Salads - healthy and satisfying meals on their own or  a perfect side dish to any main meal.  


FOUR BEAN PASTA SALAD
(NOT suitable for VEGANS)




    



















INGREDIENTS & METHOD


  • 100gms cooked spiral pasta
  • 300gms can of four bean mix (drained & rinsed)
  • 1 chopped tomato
  • 1 chopped avocado
  • 1 chopped cucumber
  • 1 grated carrot
  • 20gms baby spinach leaves
  • 1-2 tsps. balsamic dressing
  • salt & pepper to taste

Cook pasta according to packet instructions, drain, transfer to a large bowl & set aside to cool.  Add other ingredients, toss to combine and serve immediately.  

 



Stir-fried Green beans salad with a hint of coconut & dry red chilli flakes, seasoned with salt (suitable for VEGANS)


Chickpea salad with onion, tomato, green peas, green chilli, with a hint of olive oil, herbs & spices
(suitable for VEGANS)
 
Cooked Pasta, grated carrot, finely chopped capsicum, spinach, cucumber, tomato, avocado - seasoned with salt, pepper, olive oil, Italian tomato based herb, onion & garlic sauce - toss to combine & serve cold
(NOT suitable for VEGANS)



Lentil & vegetable Salad - washed & soaked Chana dal with cucumber, tomato & grated carrot, coconut & salt (suitable for VEGANS)

Carrot Salad - Grated carrot & soaked Moong dal with salt, lemon juice, coconut & coriander (suitable for VEGANS)




5 Beans mixed salad 
(suitable for VEGANS)



Ingredients: 1 handful each of butter beans, chickpeas, white beans, red kidney beans, channa dal, 1-2 carrots grated, 1 large chopped tomato, few table spoons of chopped coriander leaves, salt and lemon juice to taste.


Method - Wash and soak all beans for an hour.  Except channa dal cook other beans until tender.  Add salt and lemon juice and mix everything in a large bowl, toss to combine and serve as a side dish to any of your main meal.



CRUNCHY COMBO SALAD
(suitable for VEGANS)


Ingredients: (serves 4-5 people as a side dish)


·       1cup of Alfalfa sprouts
·   2 cups of crunchy combo sprouts (dry green peas, moong beans, red  lentils, halasandi kalu (black eyed peas) - washed, soaked overnight and ready to use next day)
·   1 each of chopped cucumber and tomato
·   Salt and pepper to taste
·   Salad dressing of your choice
·   Coriander to garnish               

           Mix all the ingredients in a large bowl, toss to combine and serve.

Simple garden salad
(suitable for VEGANS)


Ingredients: (serves 4 people as a side dish)

·       1 each of apple, pears, cucumber, tomato, (all sliced into small pieces)
·       ½ cup grated carrots
·       ½ cup spinach leaves
·       Salt and pepper to taste
·       Vinegar or lemon juice to taste
              
           Mix all the ingredients in a large bowl, toss to combine and serve immediately.
 
Corn and Avocado salad 
(suitable for VEGANS)

 

Ingredients: (serves 4 people as a side dish)

·       2 ripe avocados, peeled and finely chopped
·       1 cup corn kernels
·       1 shallot thinly sliced
·       2 spoons of chopped coriander leaves
·       Salt and lemon juice to taste

Mix all the ingredients in a large bowl and toss to combine, serve immediately.
