Sweet Potato (ಗೆಣಸು) curry

Ingredients
  • 2 large sweet potatoes (peeled and cut into bite size pieces)
  • 1 cup plain yogurt
  • 1/2 tsp. turmeric powder
  • salt to taste

For Masala (all roasted & grinded into smooth paste)
  • 2 chopped & fried tomatoes
  • 1 tsp. each of urud dal, cumin seeds, coriander seeds
  •  2 tsp. sesame seeds
  • Roasted dry red chillies to taste
  • 1/2 cup coconut (fresh or desiccated)
For Seasoning
  • 2 tsp. coconut oil
  • pinch of hing powder
  • 1 tsp. mustard seeds
  • few curry leaves

Method
  1. Cook peeled & cut sweet potatoes until tender (by adding turmeric powder)
  2. Dry roast masala ingredients and grind them into a smooth paste; add this to cooked sweet potatoes, mix well
  3. In a separate pan, heat coconut oil, season (seasoning) ingredients, add this to cooked sweet potatoes
  4. Add yogurt & salt, mix everything well to coat and simmer for few minutes
  5. Remove from heat, serve hot with rice, idli or dosa varieties
