Apple-Cinnamon Crepes
Ingredients & Method
For apple filling
- 3 medium apples, diced
- 2 tsp. brown sugar
- 1 tsp. cinnamon powder
- 1 tablespoon water
- 1.5 cup milk
- 1 cup plain flour
- 1 tsp. vanilla extract
- 1 tsp. sugar
- pinch of salt
- powdered sugar, for dusting
Method
- In a large mixing bowl, mix milk, flour, salt, vanilla and sugar--until the batter is smooth and there are no lumps.
- In a nonstick skillet, heat 1 tsp, of butter over medium heat. Use a 1/2 cup measuring cup to scoop the batter from the bowl into the pan.
- Tilt the pan a bit to distribute the batter to the edges so the crepe is as thin as possible.
- When little air bubbles start to pop up on the crepe (after about a minute or two), flip it over and cook other side (backside should be slightly golden brown).
- Transfer to a plate and repeat the cooking process for the remaining crepes.
To Serve – place one crepe on a plate, scoop some apple filling inside, close crepe, place vanilla ice-cream & whipped cream to the side, dust with little powdered sugar, serve.
