Apple-Cinnamon Crepes






Ingredients & Method

For apple filling

  • 3 medium apples, diced
  • 2 tsp. brown sugar
  • 1 tsp. cinnamon powder
  • 1 tablespoon water


Method - In a saucepan, add apples, cinnamon, sugar, and water. Simmer for 10 minutes over medium heat until the apples are just softened. Remove from heat and set aside.

For crepes

  • 1.5 cup milk
  • 1 cup plain flour
  • 1 tsp. vanilla extract
  • 1 tsp. sugar
  • pinch of salt 
  • powdered sugar, for dusting

 Method

  • In a large mixing bowl, mix milk, flour, salt, vanilla and sugar--until the batter is smooth and there are no lumps. 
  • In a nonstick skillet, heat 1 tsp, of butter over medium heat.  Use a 1/2 cup measuring cup to scoop the batter from the bowl into the pan. 
  • Tilt the pan a bit to distribute the batter to the edges so the crepe is as thin as possible. 
  • When little air bubbles start to pop up on the crepe (after about a minute or two), flip it over and cook other side (backside should be slightly golden brown). 
  • Transfer to a plate and repeat the cooking process for the remaining crepes.


To Serve – place one crepe on a plate, scoop some apple filling inside, close crepe, place vanilla ice-cream & whipped cream to the side,  dust with little powdered sugar, serve.
