ITALIAN SALAD - Quick & easy meal in minutes

INGREDIENTS & METHOD
  • 1-2 cups Roasted / fried / cooked vegetables - spinach, zucchini, capsicum, onion, pumpkin, carrot, cauliflower, broccoli
  • 1/2 cup Raw vegetables - olives, tomato, avocado, cucumber
  • 2-3 tbsp. tomato pesto sauce
  • Salt & pepper to taste
  • 250 gms cooked Fettuccine 
  • 4 tbsp. olive oil
  • Extras - finely chopped red chilli to taste & 2-3 garlic clove

Fettuccine cooked until tender.  Heat oil in a pan,  fry red chilli & garlic, roast vegetables for few minutes.  Add salt, pepper & tomato pesto sauce.  On a plate - arrange cooked Fettuccine, roasted vegetables, raw vegetables - serve
