Fruit & Nut Cake (Eggless)





INGREDIENTS
  • Plain flour - 1.5 cups
  • sugar - 1 cup (powdered)
  • Baking powder - 1 tsp
  • Baking soda - 1/2 tsp
  • Butter & milk - 3/4 cup each
  • Almond & vanilla essence - 1 tsp. each
  • Dry fruits & nuts of your choice (in this recipe I have just used almonds, pistachios, mixed berries)
  • condensed milk - 1/2 cup (optional)


METHOD

  • Melt butter and allow it to cool.  In a large bowl add ingredients, chopped fruits & nuts and mix well to combine and set aside for 5 minutes.
  • Pour this batter to a greased cake tray & bake in a preheated oven @ 180 deg. C for about 30-35 minutes or until done and little bit brown on the top
  • When cake is completely cool, cut into pieces & serve
