PUNJABI Chole Pulav




Chole (Chickpeas / Kabul Channa / Garbanzos)
Noted ingredient in many Indian and Middle Eastern dishes such as curries, falafels and hummus.   Delicious nut like taste and a texture that is buttery, are rich in both soluble and insoluble dietary fiber; is a good source of protein.  Many people think of chickpeas as being beige in color, other varieties feature colors such as black, green, red and brown.   


For home made Chole masala powder, following ingredients are dry roasted and when cool blended into smooth powder


For making Chole Pulav you need

Cooked rice - 2 cup
Cooked chickpeas - 1 cup
Chole Masala - 4 tsps.
salt to taste
lemon juice to taste
chopped coriander leaves for garnishing
Oil & ghee - 2-3 tsps.
sliced green chillies to taste
Large onion sliced - 1
ginger-garlic to taste
cumin & caraway seeds - 1 tsp. each


Method







 In a pan, heat oil and ghee
add cumin and caraway seeds and fry for few minutes
add onions, chillies, ginger & garlic - fry for few more minutes
 
 add other ingredients - chole masala, cooked chickpeas, salt & lemon juice, mix well to combine
Lastly, add cooked rice, mix well- garnish with coriander leaves 
Serve hot with Raita, Papad & Pickle 
(FOR VEGAN VERSION - AVOID RAITA (WHICH IS YOGURT BASED DISH)
