Barley-Couscous-Quinoa Salad





Ingredients

  • Barley cooked - 1/2 cup
  • Mixed Quinoa cooked - 1/2 cup
  • Couscous cooked - 1 cup
  • Chopped - cucumber, tomato, red onion, kalamata olives
  • home made dressing - olive oil, balsamic vinegar, lemon juice, salt, pepper & dry parsley leaves
Method
  • Cook dry barley in boiling water (approximately 10-15 minutes) until tender
  • Cook Quinoa in boiling water, cover & simmer on low heat until tender and water is absorbed.  Fluff with a fork.
  • Stir in Couscous in boiling water.  Wait for 10 minutes (till water is absorbed), fluff with a fork
  • In a large mixing bowl,  add cooked barley, quinoa & Couscous
  • Pour in dressing, add chopped cucumber, tomato, red onion & olives
  • Gently mix well to combine, Serve
