Barley-Couscous-Quinoa Salad
Ingredients
- Barley cooked - 1/2 cup
- Mixed Quinoa cooked - 1/2 cup
- Couscous cooked - 1 cup
- Chopped - cucumber, tomato, red onion, kalamata olives
- home made dressing - olive oil, balsamic vinegar, lemon juice, salt, pepper & dry parsley leaves
- Cook dry barley in boiling water (approximately 10-15 minutes) until tender
- Cook Quinoa in boiling water, cover & simmer on low heat until tender and water is absorbed. Fluff with a fork.
- Stir in Couscous in boiling water. Wait for 10 minutes (till water is absorbed), fluff with a fork
- In a large mixing bowl, add cooked barley, quinoa & Couscous
- Pour in dressing, add chopped cucumber, tomato, red onion & olives
- Gently mix well to combine, Serve
