Cabbage & Cauliflower PARATHA | Panch Phoran & Vegetable DAL

Cabbage & cauliflower PARATHA
 
 Stuffing Ingredients (combined, lightly fried in oil for 10 minutes.  Set aside to cool)

·       1 cup each – shredded cabbage & cauliflower
·       Green chilli to taste
·       ½ bunch chopped coriander
·       Salt & lemon juice to taste
·       2 tsp. garam masala powder
·       Pinch of turmeric powder
·       2 tbs. oil



Dough ingredients (make dough, rest for 30 mins, make small circles, add a spoonful of stuffing, close all sides, roll again, roast with oil both sides)

·       3 cup – wheat flour
·       Salt to taste
·       3 tbs. oil
·       ½ tsp. each – chilli, pepper, cumin & coriander powders
·       Water as needed to make dough



Panch Phoran & Vegetable Dal

(cooked, simmered for 15 mins, served hot)
·       2 tbs. Panch Phoran (5 spice Bengali seasoning which consists of cumin, fennel, fenugreek, mustard & nigella seeds)



·       250 gms – spinach
·       ¼ cup -  green onions
·       2 tomatoes
·       Small piece ginger & garlic
·       3 green chilli
·       ¾ cup each – toor & moong dal
·       Salt to taste
·       3 tbs. garam masala
·       ¼ cup milk
·       Lemon juice to taste
