GOJJU - SOUTH INDIAN DELICACY - is one of the popular side dishes consumed with rice, chapati, dosa & idli.
There are different versions of making it using a variety of vegetables such as - Bendekai (okra), Hagalkai (Karela / bitter gourd),
Eggplant, Pineapple, Raw Mango, Cucumber, Tomato, Tamarind, Onion, Capsicum and
the list goes on.

ADD - 1 TABLE SPOON EACH - CORIANDER POWDER, RED CHILLI POWDER & RASAM POWDER, 1/2 TSP. METHI POWDER
MIX WELL TO COMBINE BY ADDING SALT TO TASTE
ONION & GARLIC FREE - TOMATO GOJJU IS READY TO SERVE WITH RICE & CHAPATI

ಹುಣಸೆಹಣ್ಣಿನ ಗೊಜ್ಜು |
For Gojju powder-
roast 2 tsps channa dal, 1 tsp. urud dal, 1/2 tsp. pepper corns, 1/2
tsp. cumin seeds, dry red chillies to taste, dry coconut. Blend into
powder form or into smooth paste. (methi seeds and sesame seeds are used
only for few sorts of gojju's that I prepare).
INGREDIENTS & METHOD
1 cup vegetable of your choice, 2 tsps oil, 1-2 tsps. gojju powder, pinch of hing and turmeric powder, salt to taste, tamarind juice and jaggery to taste, mustard seeds and curry leaves for seasoning.
Heat oil in a pan, season mustard seeds and curry leaves. Add hing,
turmeric powder, veggies of your choice. Fry till they are tender. add salt, gojju powder, tamarind juice and jaggery powder and
simmer till sauce becomes thick. Serve hot with boiled rice or chapati
or idli & dosa varieties.
