ANDHRA - SPICY TOMATO CHUTNEY
For Andhra style spicy tomato chutney ingredients are - 4 chopped tomatoes, green & red chilies to taste, salt to taste, tamarind juice to taste, 2 tsps oil, 1/4 tsp. each of roasted sesame seeds, cumin seeds, bengal gram, urud dal, 1-2 tsps of dry coconut. For seasoning - few curry leaves, mustard seeds, hing and turmeric powder.
Method - Roast all the ingredients and when cool grind into a smooth paste. In a pan, heat oil and season your mustard seeds, curry leaves, turmeric powder and hing. To this add your grinded chutney paste and simmer for few minutes. Serve with dosai, idli, chapati or boiled rice.
