Shankar Poli varieties



Shankar Poli - a very popular snack food in Bangalore, capital city of Karnataka state in India which is made in salty, sweet and spicy varieties.  Here is my recipe which I learnt from my mother who is an excellent cook

 



For Sweet Shankar Poli  

Ingredients – 1 cup wheat flour, 1 cup Maida (plain flour), 1 cup water, 1 cup powdered sugar, pinch of cardamom powder, 2tsp. clarified butter (ghee), oil for deep frying.


Method – dilute sugar in water until dissolved.  Mix flours, ghee and diluted sugar water together, kneed into dough.  Roll into round shapes and cut into small pieces (or desired shape); Deep fry and serve.  

This can be stored in your pantry section for up to 2 weeks in an airtight container.

 

For Spicy version – replace sugar with red chilli powder, pepper & cumin powder, salt to taste.  Make dough, roll, cut into shapes, deep fry and serve


For Salted version - just salt is added to taste, rolled and cut into desired shapes, deep fried and served.
