Dharwad Pedha (ಧಾರವಾಡ ಪೇಡ)
Sweet delight, unique to the state of KARNATAKA, India. It derives its name from the city of "DHARWAD" in Karnataka State and this sweet's history is around 175 years old.
Ingredients (makes approximately 25 pieces)
- 1 1/2 cup khoya
- 1 cup sugar
- 4-5 tsps. pure ghee
- 1/2 tsp. cardamom powder
Method
For home-made khoya - boil 1.5 litres full cream milk (which makes 1 1/2 cup khoya). Reduce heat (low) and continue to cook milk stirring occasionally until milk is thick to form khoya. This takes approximately 3-4 hours to get a perfect khoya
In a heavy bottomed pan (low flame), add ghee, pour in prepared khoya, sugar & cardamom powder, mix well. Continuously stir this pedha mixture until it forms a single mass and leaves the bottom and sides of pan.
Pour this mixture on a greased plate, allow it to cool
Roll this into small balls, On a plate spread some powdered sugar.
Roll the prepared pedhas to completely coat with sugar all over
