INDIAN - Starter Platters | BAJJI - BONDA - PAKODA




There are varieties of Indian starters which are delicious, spicy and mouthwatering. 






Starters are the best way to start any meal and these are roasted, baked or deep fried. 

BAJJI, BONDA & PAKODA - the simplest snack varieties which can be prepared using different vegetables such as potato, cauliflower, broccoli, seemebadanekai (ಸೀಮೆಬದನೆಕಾಯಿ or choko or chayote), onion, chili, bread and so on…





MAIN INGREDIENTS consists of besan flour, rice flour, salt, different herbs & spices - which are combined together, and the batter consistency should be like idli / pancake batter.  Sliced vegetables are dipped / mixed into the batter and deep fried until golden brown & served hot with tea or coffee.

INGREDIENTS & METHOD

  • 1 cup Besan flour & 1/2 cup rice flour
  • 1/4 tsp Hing powder
  • salt & red chili powder to taste
  • pinch of cooking soda
  • few chopped curry leaves
  • 1/2 tsp. turmeric powder
  • 1 whole cauliflower 
  • 1/4 tsp. ginger paste
  • 1/4 tsp. Ajwain seeds
  • enough oil for deep frying
  1. In a large mixing bowl, add ingredients, mix well to combine using little water.
  2. Heat oil in a pan, keep the flame on a medium heat.
  3. Dip vegetables of your choice in the batter & deep fry until golden brown.
  4. Remove from heat and drain any excess oil.
  5. Serve hot with tea or coffee.

ONION 
PAKODA - finely chopped onions, green chillies, curry leaves, coriander leaves, ginger, salt & red chilli powder to taste, pinch of cooking soda, 1 cup Besan flour, 1/4 cup rice flour, 2 tbs. fine semolina (Rava), oil for deep frying.


In a bowl - mix ingredients, deep fry until golden brown.   Serve hot!
