No-Bake Raspberry Cheesecake
This rich, creamy & delicious No-Bake Raspberry Cheesecake sure to keep your taste-buds occupied; which makes a great dinner party dessert, ready in less than 30 minutes.
INGREDIENTS
500 gms fresh or frozen raspberries, 395 gms condensed milk, 300 gms ricotta cheese, 2 tsp. lemon juice, 2 tsp. sugar, 6 pieces of toasted milk rusk.

METHOD
On a low / medium flame, cook raspberries by adding lemon juice and sugar for 2-3 minutes.
In a bowl, add toasted milk rusk and crumb a little bit.
In a separate mixing bowl, add ricotta cheese and condensed milk, cook in microwave for about 3-4 minutes.
In a tall glass, arrange rusk crumbs at the bottom, pour in cheese mixture, finish with raspberry mixture. Refrigerate for few minutes and serve cold.
