BANGALORE Iyengar Bakery - Palya Bun

Bake in a pre-heated oven at 180 deg. C for about 40 minutes (until golden brown on top)


FOR STUFFING - 6 boiled & mashed potatoes, 1 large onion, fresh chilli, coriander, curry leaves, pinch of turmeric & hing powders, 1 tsp. cumin seeds, few table spoons of oil, salt to taste

HOW TO PROCEED -   In a pan, heat oil, fry cumin seeds, slowly add other ingredients and fry for few minutes.  Lastly, add mashed potatoes, salt; mix well to combine.  Remove from heat and allow to cool completely

FOR BUN DOUGH - self-raisin flour 1.5 cups, milk as needed, 2 tsp. sugar, 2 tsp. ghee, salt to taste.

HOW TO PROCEED - In a mixing bowl, add ingredients and make a soft dough using milk.  Rest this dough for 10 minutes.  Equally divide the dough into small balls, roll into circles, add a spoonful of potato filling, close all sides and make round shapes.  Press a little bit on top, brush with milk and bake in the oven.
