Brown Rice with Jeera-Methi

Less than 30 mins meal with simple ingredients - rice, cumin, methi, coconut oil, salt, pepper, garam masala |
Ingredients
- 2 cup brown basmati rice
- 2 cup chopped methi leaves
- 2 tsp. jeera (cumin) seeds
- salt to taste
- lemon juice to taste
- chopped green chillies to taste
- 1 tsp. each - cardamom, clove & cinnamon
powders
- 1 each - finely chopped onion &
tomato
- 1/2 tsp. finely chopped garlic & ginger
- 1-2 bay leaves
- 4 tsps. olive oil
Method
- In a large pan, heat oil - fry jeera seeds
until golden brown
- Add - green chilli, ginger, garlic, onion
& tomato - fry until onion is transparent & golden brown
- Slowly add other spice powders - mix well to
combine
- Add washed rice and cook until tender
- Add salt & lemon juice - mix well to
combine
- Remove from heat, serve hot with any curry,
dal or raita
