Caramelized Banana Cake





Ingredients
¾ cup whole wheat flour
¼ cup raw sugar
3 mashed bananas
      100 ml milk OR 1/4 cup milk + 1/4 cup plain yogurt
      ½ tsp. olive oil margarine
      ¼ cup olive oil
      ½ tsp. each – cinnamon & cardamom powders
      ½ tsp. each – baking powder & banking soda
1 tsp. vanilla essence

Method

For caramelizing – heat a sauce pan, add sugar, milk, margarine, vanilla essence, bananas – bring to boil (on a low heat) until sugar turns dark and the mixture is little bit thick.  Remove from heat and allow it to cool.

In a separate mixing bowl, add flour, yogurt (if using), olive oil, cinnamon & cardamom powders, baking powder and baking soda - mix well.  To this add caramelized banana mixture - mix well to combine.

Grease a cake baking tin, pour the cake mixture and bake on a preheated over at 180°C for about 40 minutes (or until done / when a skewer inserted comes out clean).  Served warm or cold.
