MALENADU (ಮಲೆನಾಡು) Kadubu



MALENADU - region of Karnataka state in India which covers the western and eastern slopes of the Western Ghats, Sahyadri mountain range, approximately 100 kms in width; covers parts of Belgaum, Shimoga, Chikkamangalore, Coorg and Hassan districts, Western foothills of Dakshina Kannada and Udupi districts.

Batter, salt, hing, pepper & ginger powders - steam cooked & served with Drumstick Sambar (Variations - can be used soaked chana dal or grated vegetables or avarekalu, added to the batter and then steam cooked)
Batter Ingredients -2 cups raw rice, 1 cup white urud dal, 1 handful poha (avalakki), salt to taste.  

How to Proceed Wash rice, poha and urud dal and soak them overnight.  Grind them and keep the batter overnight to ferment (Batter will be ready to use next day).  Add salt to taste and steam cook for 15-20 minutes.
