Spring Onion-Yogurt Dip







Ingredients
  • 1 bunch spring onion (save some for finely chopping & decorating on top)
  • 1 cup plain yogurt
  • 6 tsps. fresh lemon juice
  • green chillies, salt & pepper to taste
  • 2 tsp. chopped coriander leaves
  • 2 tsp. olive oil
  • Cucumber sticks & toast to serve 
Method - In a food processor, blend all the ingredients to smooth texture with olive oil.  Can be served as a dip for freshly cut cucumber sticks and crackers or as a spread to toast and sandwiches.
