HOLIGE / BELE OBBATTU / PURAN POLI - prepared on special occasions such as Hindu festival of Ugadi, Gowri and Ganesha celebrations; in the Indian States of Karnataka, Andhra Pradesh, Tamil Nadu, Maharashtra, Goa & Gujarat.
Ingredients for making Bele Holige
For the filling
- 1 cup toor dal (cooked, mashed & excess water drained)
- 1 cup freshly grated coconut
- 1 cup powdered jaggary (more or less to your taste)
- 8 cardamom pods (powdered)
- 1 cup maida flour
- 1 tsp. chiroti rava (optional)
- pinch of salt
- 1/2 tsp. turmeric powder
- 10-15 tsps. cooking oil
Method
- In a pressure cooker, cook toor dal, mash a little bit and drain any excess water
- Grate coconut and grind a little bit
- To the cooked toor dal, add the grinded coconut and fry for few minutes
- When cool, grind into smooth texture
- Make a dough using chiroti rava, maida, salt, turmeric powder
- Leave it for 10-15 minutes and then add 10 tsps. oil on top of the dough (another 15 minutes keep it aside)
- Using this dough, make puri size rounds, fill lemon size toor dal mixture in it, close all sides, roll it again on a banana leaf or a plastic paper
- Heat a non-stick pan, cook both sides.
- Can be served warm or cold with ghee and milk
