Navratan Korma
Navratan Korma or Nine Gem Curry is a Mughlai cuisine where 9 different varieties of vegetables, fruits & nuts are cooked in a creamy sauce with aromatic herbs and spices. This (& my favourite) dish is bit sweeter in taste than my other Korma recipe and tastes great with any of your Indian breads and rice varieties.
9 Gem Ingredients: (all together 2 cups) - steam cook vegetables until tender, fry paneer, raisins & cashew nuts in little bit of ghee.

- beans
- peas
- potato
- cauliflower
- zucchini
- paneer
- raisins
- cashew nuts
- 1 each of onion & tomato (sliced)
- green chillies to taste
- salt to taste
- ginger-garlic paste to taste (PLEASE NOTE GARLIC IS OPTIONAL)
- pinch of turmeric, hing powders
- 1/2 tsp. ghee
- 1 tsp. cooking oil
- 1/2 tsp. sugar
- 1/4 cup cooking cream & thick yogurt
- 1/2 cup milk
- 1/2 tsp. each of cumin & coriander powders
- 1/4 tsp. mango powder
- garam masala powder to taste
- Chopped coriander leaves for garnishing
- Heat oil in a pan, fry onions, tomatoes, ginger, garlic & green chillies until done. Keep it aside for cooling.
- Blend this into a smooth paste by adding hing, turmeric, sugar, cumin & coriander powders, mango powder.
- Mix this blended paste with your 9 gem cooked & fried ingredients, add salt and garam masala powder, milk, yogurt & cream.
- Simmer on low flame until the sauce thickens, serve hot with rice or bread.
