Navratan Korma



Navratan Korma or Nine Gem Curry is a Mughlai cuisine where 9 different varieties of vegetables, fruits & nuts are cooked in a creamy sauce with aromatic herbs and spices.  This (& my favourite) dish is bit sweeter in taste than my other Korma recipe and tastes great with any of your Indian breads and rice varieties.

9 Gem Ingredients: (all together 2 cups) - steam cook vegetables until tender, fry paneer, raisins & cashew nuts in little bit of ghee. 
  1. carrot
  2. beans
  3. peas
  4. potato
  5. cauliflower
  6. zucchini
  7. paneer
  8. raisins
  9. cashew nuts
Other Ingredients:
  • 1 each of onion & tomato (sliced)
  • green chillies to taste
  • salt to taste
  • ginger-garlic paste to taste (PLEASE NOTE GARLIC IS OPTIONAL)
  • pinch of turmeric, hing powders
  • 1/2 tsp. ghee
  • 1 tsp. cooking oil
  • 1/2 tsp. sugar
  • 1/4 cup cooking cream & thick yogurt
  • 1/2 cup milk
  • 1/2 tsp. each of cumin & coriander powders
  • 1/4 tsp. mango powder
  • garam masala powder to taste
  • Chopped coriander leaves for garnishing
Method:
  • Heat oil in a pan, fry onions, tomatoes, ginger, garlic & green chillies until done.  Keep it aside for cooling.
  • Blend this into a smooth paste by adding hing, turmeric, sugar, cumin & coriander powders, mango powder.
  • Mix this blended paste with your 9 gem cooked & fried ingredients, add salt and garam masala powder, milk, yogurt & cream.
  • Simmer on low flame until the sauce thickens, serve hot with rice or bread.
