Traditional Cuisine from the South Indian state of Karnataka (Bengaluru, Mangalore & Udupi regions)

Simple, tasty and low fat yogurt based curry consumed with plain rice.

BHINDI / OKRA MAJJIGE HULI



Udupi version of Majjige Huli using Zucchini (Summer Squash)
(Mangalore / Udupi version)


Ingredients - Vegetable of your choice - sliced into bite size pieces, salt to taste, 1 glass of thin butter milk

For Masala - 2 tsp. raw rice, green chillies to taste, 1/4 tsp cumin seeds, 1/2 cup coconut cream - grinded into smooth paste

For seasoning - 1 tsp. coconut oil, 1/4 tsp. each of mustard & methi seeds, few curry leaves, 1-2 dry red chilli



Method:
  • Cook vegetable until tender
  • Grind masala ingredients into a smooth paste
  • Heat oil in a pan, season with seasoning ingredients, add cooked vegetable, salt, grinded paste, butter milk.
  • Simmer on a low heat for 5 minutes
  • Serve this simple dish with plain rice & ENJOY the unique flavour of Coastal Karnataka

 Ingredients
  •  1 cup vegetables of your choice (cucumber, Chayote Squash / ಸೀಮೆಬದನೆಕಾಯಿ, Okra / ಬೆಂಡೆಕಾಯಿ, white melon / white guard / ಬೂದಕುಂಬಳಕಾಯಿ etc.,)
  • salt to taste
  • 1 cup plain yogurt or butter milk 
For Masala - 1/2 cup channa dal (soaked), green chillies to taste, small piece of ginger, coriander leaves or coriander seeds (soaked) / coriander powder, coconut, pinch of hing, pepper corns to taste, 1/2 tsp. cumin seeds, pinch of turmeric powder - grinded into a smooth paste

For seasoning - 1 tsp. cooking oil, 1/4 tsp. each of mustard seeds, methi seeds, few curry leaves

Method:
  • Cook vegetable until tender (if using Okra, it has be fried before and then added to grinded spice mixture)
  • Grind masala ingredients into a smooth paste
  • Heat oil in a pan, season with seasoning ingredients, add cooked vegetables, salt, grinded paste, plain yogurt / butter milk.
  • Simmer on a low heat for 5-10 minutes
  • Remove from heat, serve hot with plain rice
