Carrot Dosa with Tindora Fry
For TINDORA FRY - Ingredients:-
- 1/2 kg tindora (tondekai) cut into lengthwise
- salt to taste
- pinch of hing & turmeric powder
- 1/2 tsp. mustard seeds for seasoning
- 1/2 tsp. corn flour
- 1 tsp. each of cumin & coriander powder
- red hot chilli powder to taste
- 2 tsp. cooking oil
- Heat oil in a pan, season hing, turmeric powder and mustard seeds
- fry tindora (on a medium flame) until tender
- add cumin, coriander, chilli powder, corn flour with salt and mix well
- serve hot with dosa, rice or chapati
For CARROT DOSA- Ingredients:-
- 1/2 cup each of rice and moong dal (washed & soaked for 2 hours)
- 1/2 tsp. methi powder
- 2 carrots grated
- 1 chopped tomato
- dry red chillies to taste
- salt to taste
- 1/2 tsp. ginger powder
- 2 tsps. dry coconut
- oil to make dosas
Wash & soak rice & dal for 2 hours. Grind with other ingredients by adding salt.
Make dosa just like other dosa varieties (on low-medium flame, cook both sides); serve hot.
