INGREDIENTS & METHOD

1/2 cup cabbage, 1 eggplant, 1 capsicum, salt to taste, 1/2 tsp. turmeric powder, 1-2 tbsp. garam masala powder,  1-2 tbsp. curry powder, 2 tbsp. oil,  2 puff pastry sheets.

Heat oil in a pan,  cook vegetables until tender.  Add other ingredients.  Mix to combine,  remove from heat & let it cool for 10-15 mins.  

Cut pastry sheets into you desired shapes,  add filling, close all sides.  Bake in a pre-heated oven @ 200 deg. C for about 20-25 mins.  (lightly golden brown on top)

Puff Pastry Recipe

Ingredients for stuffing – 3-4 cooked and mashed potatoes (1/2 cup cooked peas – optional), 1 chopped onion, salt, pepper powder, red chilli powder to taste 1 tsp. oil.  For covering –3-4 puff pastry sheets (makes 8-10 pieces) cut into shapes of choice.   


Method – For stuffing – Cook potatoes until tender and when cool mash them.  Heat oil in a pan, fry onions until golden brown, add mashed potatoes and peas with salt, pepper and red chilli powders, fry them for few more minutes.  Remove from flame and keep it aside for cooling.  Cut pastry sheets to your desired shape, place ½ - 1 tsp. of stuffing and close all sides by applying a little water.  Bake at 150-200 degrees until outer layer is little bit brown and crispy.  Serve hot with tea or coffee.
