MUMBAI Tikki Pav and Vada Pav







TIKKI  
 
 Cutlet made out of boiled & mashed potatoes, Indian herbs & spices, pan roasted with little bit of oil. 

PAV 

A soft bread roll and variations on "PAV" includes Tikki Pav, Vada Pav,  Pav Bhaji and so on...


For Tikki Pav 


Boiled & mashed potatoes, green chilies, coriander powder, cumin seeds, chilli powder, chat masala, salt & lemon juice are combined together.  This mixture shaped into flat round, roasted with little bit of oil on a non-stick pan until golden brown. 


For Vada Pav 



(preparation of Vada is similar to our South Indian Potato bonda)





(ಆಲೂಗಡ್ಡೆ ಪಲ್ಯ ಮಾಡಿಕೊಂಡು, ಪಲ್ಯವನ್ನು ಉಂಡೆ ಮಾಡಿ, ಕಡಲೆಹಿಟ್ಟಿನ ಮಿಶ್ರಣದಲ್ಲಿ ಅದ್ದಿ, ಎಣ್ಣೆಯಲಿ ಕರಿಯಿರಿ) 
  1. Potato mixture - Boiled & mashed potatoes, green chilies,turmeric & hing powders, mustard seeds, curry leaves, salt (similar to making of Potato Palya)
  2. Besan flour mixture - Besan flour, soda, turmeric powder, salt
  3. Potato mixture shaped into round balls, dipped in besan flour mixture, deep fried in oil


To serve 




Pav sliced into half, lightly toasted on a tava, spread garlic chutney & green chutney (recipes below) inside, place tikki (or vada for vada pav) in each pav, add date & tamarind chutney (recipe below) on top and serve


Garlic Chutney


Chopped garlic & dry coconut saute in a pan with little bit of oil.  When cool, blended with chilli powder, salt

Green Chutney

Green chillies, coriander leaves, cumin powder, salt - blended into smooth texture.

Date & Tamarind Chutney 

Washed, soaked & mashed dates, tamarind juice, jaggery or brown sugar, salt - Heat a pan & simmer until sauce becomes thick in consistency
