BUTTER MILK PANCAKES

 




PANCAKES - hotcakes, griddlecakes, batter bread, flapjack is a flat, thin & round cake which is prepared from a starch based batter which contains flour, buttermilk, milk, butter and cooked on a hot surface such as a frying pan or griddle.


Pancakes are very popular in the Western world which may be served at any time of the day or year with a variety of toppings or fillings.

Here is my version of making it by using few simple ingredients.

INGREDIENTS & METHOD


  • 2 cups plain flour
  • 1/4 tsp. baking powder 
  • 2 tablespoons melted butter (to brush pancakes while cooking)
  • 1/4 cup sugar
  • 1tsp. vanilla essence
  • 1 cup buttermilk
  • 1/2 cup milk
  • Serving tips -  served with chopped bananas, strawberries, rasberries, maple syrup, chocolate sauce, icecream, whipped cream.

In a large mixing bowl,  add flour, baking powder, sugar, essence, milk & buttermilk.  Mix well to combine and rest the batter for 30 mins.




Preheat a griddle or pan, brush pan with little butter, add 1/4 cup batter to the pan.  Cook on a medium heat for 1-2 mins.  Flip and cook the other side.


Remove from heat, place on a serving plate, arrange with chopped fruits of your choice.  Drizzle with maple syrup & chocolate sauce, dollop with whipped cream and vanilla icecream.  Serve & enjoy.
