JHUNKA / ZUNKA - Traditional Vegetarian side dish
popular in North Karnataka, Maharashtra & Goa. It is considered as a nutritious food because of its balanced content of fiber, protein, & carbohydrates. It's main ingredient is Besan or Chickpea flour mixed with other herbs & spices and served with Roti, paratha or Bhakri or Jowar roti.
INGREDIENTS & METHOD (Serves 4-5 people)
- 1 cup besan flour
- 2 each onion & tomato (chopped)
- 1 cup chopped coriander leaves
- salt to taste
- 1 spoon cumin seeds
- 1 spoon each - coriander powder, red chilli powder, turmeric powder
- 2 big spoon cooking oil
In a pan heat oil, add cumin seeds - when seeds start splattering add chopped onions and fry for few minutes. Then add tomatoes along with salt, turmeric, chilli and coriander powders. Fry for couple of minutes. Slowly add besan / chickpea flour, keep on mixing without any lumps. Sprinkle few drops of water, mix and cover lid for 2 minutes. Remove lid, add chopped coriander leaves and Jhunka is ready to serve hot with roti, paratha or Jowar roti and sliced onions and whole green chillies.
