Intercontinental Dishes - Bruschetta | Potato Lasagne | Mini Donuts | Coconut Brigadeiros

2020 Mother's day celebrations was great time with family, my daughter cooking 3 course Intercontinental meal.

Garlic bread bruschetta for starters, potato lasagne for main course, 2 different desserts - mini donuts and coconut brigadeiros!

Here are the recipes if you are interested to try in your kitchen....

Garlic bread bruschetta


Ingredients - 1 loaf sliced Italian bread, 3 tbsp. melted butter, minced garlic 1 clove, Italian seasoning to taste, parmesan cheese to taste, 6 diced roma tomatoes, 2 clove minced garlic, 1 tbsp. olive oil, salt to taste, 1/4 tsp. pepper powder, 1 bunch finely chopped fresh basil leaves

Method - preheat oven to 180 deg. C.  Melt butter with crushed garlic.  Slice bread to your desired thickness.  Top the bread slice with melted garlic butter, italian seasoning and parmesan cheese.  Bake it for 15 mins or until golden brown on top.  In a mixing bowl, combine tomatoes, salt, pepper, garlic, basil, olive oil and stir to combine.  Top the baked bread with desired amount of tomato mixture.  Garnish with extra cheese and enjoy.

 
 
Potato Lasagne


Ingredients -  5-6 peeled potatoes, salt & pepper to taste, 1 cup any chopped vegetable of your choice, mozzarella cheese, 1/4 cup finely chopped fresh parsley, 1 cup thick cream

Method - slice potatoes to your desired shape,  season with salt & pepper, toss to coat evenly.  Layer potatoes into the bottom of a greased baking pan.  Fry other vegetables until soft, set aside.  place cooked vegetables evenly on top of potatoes, followed by cheese.  Follow with layers with the remaining potatoes, vegetables, cheese.   Sprinkle evenly with parsley and additional cheese. Bake this in preheated oven (180 deg. c) for about 45 minutes or until the cheese is deep golden brown.  When cool slightly, slice and serve.


 
 
 
 
 
 
 
 
Mini Donuts (easy no yeast recipe)


Ingredients - 1 cup self-raising flour, 1/2 tbsp. plain yogurt, sugar to toss donuts before serving

Method - combine together flour and yogurt in a bowl.  Scoop into balls using spoon or hands.  Fry in oil (on medium flame) until golden brown, set aside on paper towel to dry excess oil.  Toss donuts in sugar and serve with ice cream.



 
Coconut Brigadeiros

Ingredients - 1 tbsp. butter, 400 gms sweet condensed milk, 1/2 cup coconut cream, coconut flakes as needed

Method - In a pot on low heat - melt butter, condensed milk, coconut cream until the mixture get thicker.  Pour onto a greased try, chill for few hours to get firm.  Shape and roll chilled mixture into desired shapes.  Roll the shapes in coconut flakes.   Enjoy
