SPINACH Chutney (Palak Soppu Chutney)




SPINACH (Palak Soppu) - green leafy vegetable loaded with antioxidants & nutrients.  It's an excellent source of vitamins & minerals consumed both raw and cooked.



INGREDIENTS

  • 280 gms Spinach (coarsely chopped)
  • 1 tsp. cumin seeds
  • 1/2 cup desiccated coconut
  • 1 red onion (sliced)
  • 1 tomato (sliced)
  • 1/2 bunch coriander leaves (chopped)
  • few curry leaves
  • green chilli to taste
  • salt to taste
  • lemon juice to taste
SEASONING -  pinch of hing powder, 1 tsp. mustard seeds, 1 tsp oil (heat oil, add mustard seeds & hing.  When seeds start popping up, remove from heat)

METHOD
  • Heat a pan, dry roast cumin seeds, onion, curry leaves and spinach leaves
  • Grind this with other ingredients
  • Add seasoning 
  • serve with rice, chapati, idli & dosa
