IYENGAR MALAGAAI PUDI | SPICE POWDER
Traditional Tamilian condiment (convenient substitute for chutneys) - side dish for Dosa & Idli (a tablespoon of this powder added with sesame oil or ghee to form a moist paste, pieces of dosa or idli dipped into this oil-powder mix and consumed).
INGREDIENTS & METHOD
- dry red chillies to taste
- salt to taste
- 1 tsp. hing powder (asafoetida)
- 1 tsp. turmeric powder
- 1/2 tsp. brown sugar (optional)
- 1 cup dalia (hurigadale / roasted gram)
- 1/4 cup sesame seeds
- 3/4 cup urud dal
In a pan, dry roast - chillies, dalia, sesame seeds, urud dal. When cool grind into coarse powder by adding salt, hing and turmeric powders.
