Orange & Poppy Seed Cake with Fruits






INGREDIENTS & METHOD




CAKE INGREDIENTS

1 cup self-raising flour, 2 tbsp. poppyseeds
1/4 cup orange juice, 2 tbsp. melted butter
1 cup brown sugar, 1/4 cup buttermilk
1/4 cup plain yogurt



OTHER INGREDIENTS - icing & dollop cream, fruits of your choice

ICING & DOLLOP CREAM  (below ingredients beat together until soft & fluffy)
  • 1 cup icing sugar
  • 2 tbsp. butter
  • 1 tbsp. milk
  • 1 tsp. vanilla essence
  • pinch of turmeric powder (for colour) - optional
  • 160 ml dollop cream

In a bowl, add cake ingredients and mix well to combine to a smooth consistency.  Pour batter into cake pan (cake pan lightly greased and lined with baking paper).  Bake in a pre-heated oven at 160 deg. C for about 45-50 mins (until cooked through).  When cake is completely cool, spread icing and garnish with fruits on top.
