SPINACH Rice

Quick & easy version of tangy, spicy, flavourful Spinach rice - is a meal on its own or can be served with any curries or raitas

SPINACH - a high nutritional value when steamed, quickly boiled, fresh & frozen.  It contains more iron than other green vegetables.  Originated in ancient Persia and later introduced to other nations.

MASALA FOR GRINDING - 2 tbsp. dry coconut, green chilli to taste, 1/4 cup coriander & mint leaves, few tablespoons raw peanuts & roasted gram dal (hurigadale / ಹುರಿಗಡಲೆ ), salt to taste, 1 tsp. oil, 2 tsp. tamarind juice - grinded into smooth paste
 
OTHER INGREDIENTS - 1 bunch spinach, 2 tsp. cumin seeds, 1 onion, 2 tomato, green chilli to taste, small ginger piece, 2 tbsp. lemon juice, 4 tbsp. oil, 2-3 tbsp. home-made garam masala (for recipe -    ), 1-2 cups cooked basmati rice.
 
METHOD - Cook rice and allow to cool completely.  In a pan, heat oil, fry these items - cumin seeds, green chilli, ginger, onion, tomato.  Add grinded paste, saute for few minutes.  Add spinach and fry lightly.  Add salt (if required), garam masala.  Fry till water is evaporated.  Add cooled rice to this mixture, toss to combine and serve hot with any curry or raita varieties.
