ITALIAN - Arrabiata Sauce



Any Pasta with Arrabiata sauce (Italians call it “angry pasta” because it is served very hot, dressed in abundant hot red chilli pepper).  This is a spicy dish for someone who is looking for that little bit extra kick to their pasta. 


INGREDIENTS & METHOD
 
  • 1 each red onion & red capsicum
  • 4 fresh red chillies
  • 3 cloves garlic
  • 1tsp. cider vinegar
  • 4 tbsp. olive oil
  • tomato puree (out of 5-6 tomatoes, cooked and blended into puree)
  • 1.5 tsp. tomato paste
  • salt & pepper to taste
  • 2 tsp. Italian dry herbs
 
 
 
 
In a pan heat oil, fry onion, garlic, chilli, capsicum until tender.  Add other ingredients and simmer until sauce thickens. 

Ladle over any variety of cooked pasta and serve
