FRENCH Quiche Variations





Quiche (pronounced as “Keesh”) - a savory open faced pastry crust with any filling of savory items. Quiche is served hot or cold and it is part of French cuisine but is also popular in other parts of the globe as a party food.



GREENS QUICHE without Pastry
INGREDIENTS -  1/2 cup onion, 1 capsicum, 1/2 cup spinach, few broccoli florets, 1 zucchini, 1/4 cup cheese, 4 tablespoon self-raising flour, 1/4 cup each milk & yogurt, turmeric, salt, cracked chilli & pepper to taste

  
METHOD - Toss flour & cheese together, add greens, combine milk, yogurt, seasoning.  Pour into greased baking dish, bake in a pre-heated oven at 175 deg. C for 40 minutes.  Serve with toast, salad, dressing.
 

Sour cream, mashed avocado, lime juice, salt, pepper, olive oil - combine together


VEGETABLE QUICHE with Pastry Sheets
Pastry sheets - 2 nos., Mixed vegetables - 1 cup (sliced onions, carrots, beans, peas & corn), 1/2 cup milk, 3/4 cup plain yogurt, 1 cup grated cheese, 1 tsp. olive oil, For seasoning - salt, pepper, chilli & cumin powders (to taste)
Preheat oven @ 180 deg. C for about 5-10 minutes 
Grease a quiche pan, place pastry sheets, trim edges, prick base with a fork

Heat oil in a frying pan, cook vegetables for about 5 - 8 minutes
Sprinkle with cheese, mix milk & yogurt together, season with seasoning ingredients, spread this mixture over pastry sheets
Bake @ 180 deg. C for about 30-35 minutes or until the Quiche mixture is set.
Allow for 10 minutes to set and enjoy!
