VEGAN COUSCOUS Upma







COUSCOUS - a dish of small steamed balls of semolina which is a staple food throughout the North African cuisines of Algeria, Libya, Morocco, Tunisia, Middle East and Trapani in Sicily.   


Here is my RECIPE for a quick & easy  Vegan COUSCOUS UPMA

(Serves 2-4 people  |   Prep.& cooking time – less than 30mins)


·           SEASONING INGREDIENTS - 2 tablespoon each – olive oil & coconut oil, ½ tsp. each – mustard seeds, cumin seeds, urud dal & chana dal, ¼ tsp. each – hing & turmeric powders


·           MAIN INGREDIENTS – 1 cup raw couscous (soaked in hot water until water is absorbed), ¼ cup vegetables of your choice (cut / sliced into your desired size), salt to taste, ¼ cup grated coconut


·           ADDITIONAL INGREDIENTS – ginger, garlic, green chilli, curry leaves, coriander leaves, lemon juice, water – as needed



·           Heat oil in a pan, add seasoning ingredients and fry for few minutes.  Add ginger, garlic, curry leaves, green chilli – fry for a minute.  Add onions, fry until golden brown, add tomatoes & other vegetables – cook until tender.  Add 1-2 glasses of water, allow to boil by adding salt to taste, coconut, coriander.  When water starts boiling, slowly add soaked couscous – mix well to combine, simmer for a minute or two.  Remove from heat and serve hot
