Dhaba - represents any restaurant that serves "Punjabi food" and is the name given to roadside restaurants in INDIA. They are situated on Highways and serve local cuisine. Dhaba, most commonly found next to petrol stations and are open 24 hours a day for any "Truck stops". Since many Indian truck drivers are of "Punjabi Descent", Punjabi food and music is very popular throughout India.

Dhaba Style Mutter Paneer - where peas & paneer are cooked in rich creamy tomato sauce and served with either boiled rice or any Tandoori breads |

MAIN INGREDIENTS - 1 cup cooked Peas & 2 cup Fried Paneer cubes |

INGREDIENTS for MASALA - onion, tomato, garlic, ginger, chilli & cashews (1/4 cup) |

MASALA PASTE - Heat 2 tsps. oil in a pan, fry masala ingredients and blend with cashews into smooth paste |

OTHER INGREDIENTS (seasoning) - 1 tsp. each - ghee, cumin seeds (roasted), hing, turmeric & coriander powders, chilli powder, garam masala, salt to taste |

HOW TO PROCEED - Grinded masala added to above seasoned ingredients, then add cooked Peas & fried Paneer, add few tsps. of finely chopped coriander leaves. Simmer until thick consistency. Remove from heat and serve hot with Rice or Tandoori breads |
