ITALIAN Herb & Vegetable Puffs

INGREDIENTS
- 1/2 cup dry herbs & cooked mixed vegetables (carrot, peas, corn, spinach etc.,)
- 1 cup self-raising flour
- salt, pepper & chilli powder to taste
- 1.5 cup milk
- 2 tablespoon olive oil
- 1 sliced avocado & 2 tablespoons of sour cream (for serving)
METHOD
- In a large mixing bowl, place above ingredients; mix well to combine until smooth. Set aside for 15 minutes to rest
- Pre-heat oven to 200 deg. C, grease a muffin pan with little oil and pour the prepared mixture, place pan in oven and bake until puffed and golden brown on top (approximate baking time for about 20-30 minutes)
- Transfer to a plate and serve with sliced avocado and sour cream
