Veg. TERIYAKI Noodles
TERIYAKI - a cooking technique used in Japanese Cuisine in which foods are grilled with a glaze of soy sauce, rice vinegar & sugar. The sauce used for Teriyaki is generally sweet but it can also be made spicy by using dry or fresh red chillis.
For home-made TERIYAKI sauce (approximately I have added a few tablespoons of these ingredients)
brown sugar, soy sauce, rice vinegar, ginger, sesame oil, red chilli sauce (optional), corn starch, water are combined together and cooked on medium heat until thick sauce texture.
For Stir-fry Noodles - 500 grams pack Hokkien noodles, 2 cup mixed vegetables, salt to taste, slice red onion, small piece fresh ginger, 3-4 red chillis, 3-4 tbs. sesame oil.
For garnish - toasted sesame seeds (few tsps.), extra fresh red hot chillis (for extra spice).
Method
- place noodles in a bowl, cover with boiling water, after 3-5 minutes separate with a fork, drain water. Noodles are ready to add to your favourite meal,
- Heat sesame oil in a large wok,
- add ginger, red chilli, onion - stir-fry for few minutes,
- add mixed veggies, stir-fry until tender,
- add prepared teriyaki sauce and salt if required, mix well to combine,
- add cooked noodles, mix well and simmer for few minutes
- serve hot
