Fluffy Coconut-Lemon Rice
Ingredients & Method
400 ml coconut milk
400 ml water
2 cup Jasmine rice
2 spoon lemon juice
pinch of salt
2 spoon coconut oil
400 ml water
2 cup Jasmine rice
2 spoon lemon juice
pinch of salt
2 spoon coconut oil
In a large cooking pot, combine everything together and cook rice on a medium heat until tender & fluffy.
Red Curry Paste
Ingredients & Method
Approximately 1-2 tablespoons of the following
Lightly toasted - coriander & cumin seeds, black peppercorns, salt to taste, dry red chillies (soaked in hot water for few minutes and finely chopped), lemongrass, kaffir lime, galangal, coriander roots, shallot, garlic, fresh red chilli.
Above ingredients are blended into a smooth paste.
Red Curry
Ingredients & Method
1 cup mixed vegetables (carrot, cauliflower, potato, broccoli, mushrooms, spring onion), garlic, ginger, fresh red chilli, 3 tsp. coconut oil, 400 ml coconut cream, salt to taste, red curry paste to taste.
Heat coconut oil in a pan, fry chilli, garlic, ginger, onion. Add vegetables and fry until tender & crispy. Add salt, red curry paste, coconut cream - simmer on low heat for 5-10 mins. Serve hot with Coconut-lemon rice.
