Spinach-Ricotta Cheese Rolls






Ingredients & Method

1-2 Puff Pastry Sheets
1 bunch spinach & 1 red onion - chopped & cooked until tender
250 gms ricotta cheese
2 tsp. oil
salt & pepper to taste
1-2 tsps. toasted sesame seeds (optional)

In a sauce pan, heat oil and cook onions & spinach leaves until tender.  Add salt & pepper to taste, add ricotta cheese, mix well to combine.  Allow this mixture to cool.

Cut pastry sheets into half and spoon 3/4 cup spinach mixture, roll up to enclose filling and  make rolls (brush with milk on top if required).  Sprinkle sesame seeds on top (optional)

Transfer rolls on to a baking tray and bake @ 175 deg. C for 35 minutes or until golden brown.
